Horst Gehrman, a neighboring farmer of Chacra D’dago has been working hard to produce fine specialty coffee. Honey processed for a sweeter coffee. A fabulous “discovery” for us.
Each coffee cherry is cleaned and then carefully fermented, leaving just the “honey” coating as each bean is then painstakingly dried for several weeks.
